Apple & Muesli overnight muffins

Breakfast muffins for the crew? Get a jump start and make the batter the night before. Muesli, Apple, Carrot, a hint of spice and orange juice make these an instant winner to start the day.
INGREDIENTS
1 ¼ cups plain flour
½ cup brown sugar
1 ½ cups natural muesli
2 tsp baking powder
2 tsp ground cinnamon
2tsp ground ginger
2 medium carrots grated
2 apples, peel, cored, diced
Pinch salt
3 eggs
½ cup olive oil
Zest & juice of 1 large orange
METHOD
1. In a large bowl, stir together dry ingredients.
2. Add the carrots and apples, toss through to coat.
3. In a separate bowl, whisk together the eggs, olive oil, orange juice and zest. Pour this over the dry ingredients and stir briefly. Don’t overmix as it will lead to dense muffins.
4. Cover the bowl and place in the fridge till morning.
5. In the morning heat oven to 180, fill muffin cases ¾ full whilst oven is heating, bake for 18-20 minutes. Breakfast is ready!
