It’s that time of year where we celebrate everything that makes Australia great. Our freedom, our safety, our family and friendships, our beautiful wide land, our fresh local food which keeps us healthy.
Here in Busselton we have the beautiful beaches and clean waters of Geographe Bay and lovely warm days to head out and relax with friends and family this weekend.Almost all of us will have a BBQ at least once over the three days and Prawns are pretty standard fare on this Australia Day weekend.
We have delicious large King Prawns for Australia Day, ready to throw on the barbie – just like Paul Hogan – or ready cooked. At a great price.

And here’s our favourite, super easy recipe for prawns on the barbie.
Lemon Garlic BBQ King prawns
1kg Large King Prawns Raw, butterflied and washed
3 tsp Olive Oil
1 lemon, juice squeezed
1 tsp lemon rind
4 garlic cloves, minced
25 butter softened to room temperature
1 tbsp parmesan cheese, grated
1 handful parsley, chopped
Salt and pepper
1 tsp chilli flakes (optional)
Place all the marinade ingredients into a food processor and process until just combined but not over processed.
Place the prawns into a large bowl and pour in 3⁄4 of the marinade, making sure all the prawns are covered. Then refrigerate for 30 minutes.
Heat up the BBQ to full temperature, then lower to medium and place the prawns on the BBQ shell side down until cooked. There is no need to flip the prawns (5-8 minutes).
Baste with the remaining marinade while the prawns are cooking.
Remove the prawns and squeeze over a little more lemon, salt and pepper. Garnish with parsley leaves
1 tbsp parsley leaves to garnish
2 lemons cut into quarters
1 lime cut into quarters
Warm crusty sourdough bread topped with olive oil and dukkah
