Lemon Garlic BBQ King prawns
INGREDIENTS
1kg Large King Prawns Raw, butterflied and washed
Marinade
3 tsp Olive Oil
1 lemon, juice squeezed
1 tsp lemon rind
4 garlic cloves, minced
25 butter softened to room temperature
1 tbsp parmesan cheese, grated
1 handful parsley, chopped
Salt and pepper
1 tsp chilli flakes (optional)
Place all the marinade ingredients into a food processor and process until just combined but not over processed.
METHOD
Place the prawns into a large bowl and pour in 3⁄4 of the marinade, making sure all the prawns are covered. Then refrigerate for 30 minutes.
Heat up the BBQ to full temperature, then lower to medium and place the prawns on the BBQ shell side down until cooked. There is no need to flip the prawns (5-8 minutes).
Baste with the remaining marinade while the prawns are cooking.
