Cauliflower Mac ‘n Cheese

A modern twist gives a flavour kick to an old-fashioned winter warmer Macaroni Cheese.

25 minutes including cooking | SERVES 4-6
INGREDIENTS
250g macaroni pasta
1 TBSP Capel butter
2 TBSP plain flour
1 cup milk
1&1/2 cups grated mozzarella cheese
1 small or half a large cauliflower (about 600g)
1 egg, beaten lightly
½ cup Panko or fresh breadcrumbs
½ tsp ground nutmeg
2 TBSP parsley chopped coarsely
METHOD
1. Cut cauliflower into florets – Hot tip, use the leaves and stem diced. Don’t waste them.
2. Bring a large pan of water to boil, add macaroni, after 7 minutes add cauliflower, cook until pasta is just tender (about 7 minutes), drain, retaining 1 cup of the cooking liquid.
3. To make the cheese sauce, melt butter in a medium saucepan, add flour, cook, stirring until bubbling, gradually stir in milk and the reserved cup of liquid. Cook, stirring until mixture boils and thickens. Remove from heat, stir in 1 cup cheese and parsley.
4. Combine macaroni, cauliflower, cheese sauce and egg, gently. Add salt & pepper to taste
5. Turn into greased ovenproof dish and top with breadcrumbs combined with remaining cheese. Sprinkle with nutmeg.
6. Place under hot grill for 5-10 minutes minutes, until golden brown.
