Overnight oats are a delicious (and easy!) breakfast option you can make the night before. Super healthy, loaded with fibre, this meal will keep you full until lunchtime. The recipe contains all you need but you can  top them with your favourite fruits, nuts and seeds if you like.

Prep time: 10 minutes

Serves: 2

1 cup rolled oats (oats help keep cholesterol down)

1&1/2 cups milk or nut mylk of your choice

I Tbsp Chia seeds ( or protein and fibre)

1 tsp cinnamon (reduces inflammation)

2 Tbsp plain unsweetened pot set yoghurt (important you use the real stuff, not a dessert’yoghurt’)

1 banana sliced

2 figs quartered

1 tsp honey or maple syrup

1 Tbsp seeds of your choice (pumpkin, sunflower)

  1. Combine oats, milk, chia seeds and cinnamon in a container with a lid and refrigerate overnight.
  2. in the morning, stir the mixture and portion into 2 bowls, top with everything else.
  3. enjoy!

The fridge mixture will keep for up to 7 days so you can make a bulk mix ready for the week. You can also portion it and take to work for a mid morning snack.
