Manjimup Smoked Trout salad with Kipfler potato

This is an easy lunch or tapas dish that is sure to impress! It sounds expensive but it actually isn’t, costing around $4.50 pp
The delicious flavour of this rainbow trout, paired with “oh so good” kipfler potatoes, the local olive oil, lemon zest, is a real winner.
INGREDIENTS:
4 Large Manjimup kipfler potatoes, cooked. We boiled them until cooked but firm.
2 radishes, sliced thinly
½ Myalup red onion, sliced thinly
1 x 250g bag Southern Forests mesclun salad mix
1 Holy Smoke smoked Rainbow trout
DRESSING:
Salt and pepper
¼ cup Arthurs Grove extra virgin olive oil
1 tablespoon capers
Zest of 1 lemon
2 Tablespoons chopped parsley
METHOD:
Dice cooked kipfler potatoes.
Remove skin from trout and cut or shred into small pieces, discarding any bones.
DRESSING: Mix the oil, lemon zest, capers, parsley, salt and pepper together
Place all ingredients in a large bowl, pour over dressing and gently mix together.
Serve on a platter, together with BAKED rye sour dough bread and a bottle of chilled WA dry white wine.
