Orange Polenta Cake (GF & DF)

PREP TIME 1 hour 15 minutes
Cook time 40 minutes | Serves 10

This cake is so easy to make and absolutely delicious. Everyone loves it and if there is any left, it keeps well for up to 6 days. Tangy orange and lovely smooth polenta and almond meal are perfect companions.

 

INGREDIENTS – CAKE
• 2 WA oranges
• 5 WA eggs
• 250g caster sugar
• 100g polenta
• 175g almond meal
• 1 tsp baking powder

INGREDIENTS – SYRUP
• 100g caster sugar
• 2 Tablespoons water
• Juice of 4 WA oranges
• 1 cinnamon stick

METHOD – CAKE

1. Wash the 2 oranges, place in a saucepan, cover with water, Bring to the boil and simmer 1 hour.
2. Line a 25cm springform tin with baking paper. Preheat oven to 180 deg.
3. Drain oranges & cool slightly. Cut in half, remove any pips, blitz in a processor 10 secs.
Whisk eggs & sugar in large bowl until pale. Fold in orange puree, sugar, polenta, baking powder & almond meal.
Pour mixture into tin and bake 40 mins. Cool in tin.
METHOD – SYRUP
Heat sugar & 2 TBSP water until caramel colour, pour in orange juice, cinnamon stick, bring to boil, then reduce heat & simmer 15 mins.
Put cooled cake on a plate, make holes in cake with a skewer and pour over half syrup. Serve remaining syrup on the side. Decorate with cinnamon stick & slices dried orange.
