Zucchini Carrot Fritters
PREP TIME
25 minutes including cooking | Yield 10 fritters
INGREDIENTS
1 large zucchini
1 large carrot
½ brown onion
1 cup chickpea flour (high protein & fibre) or normal flour
½ tsp baking powder
1 tsp chopped garlic or ½ tsp garlic powder
½ tsp celery salt
WA lake salt & cracked pepper
1 egg
2 Tbsp coconut oil or other vegetable oil for frying
METHOD
1. Grate zucchini, carrot and onion
2. In a large bowl, combine the grated veges with; flour, baking powder, garlic, celery salt, salt & pepper, until veges are all coated.
3. Add egg and mix together well with a large spoon.
4. In a large frying pan add the oil over medium high heat.
5. Add large spoonful’s of the mix, slightly flatten to about 2 cm high.
6. Cook until a nice brown colour and turn, cooking for a further 2 or 3 minutes on the second side.
